Bilgi Bakes | Snowman Cupcakes

It's only 6 days until Christmas!! I'm doing at least one Christmassy thing a day until the big day because I think it adds to the festive mood of December - if it would snow, that would make it super Christmassy without any effort at all but I'm not convinced that it'll be a snowy white Christmas this year somehow. Anyway, to make up for that, I baked some chocolate chip with strawberry middle snowman cupcakes. I've made Christmas Pudding Cookies before too, which you can check out. Not only are they festive, they are honestly so fun to put together! They're a cute novel way to spend a pre-Christmas morning / afternoon, so I'd definitely recommend giving them a whirl over the next few days if like me baking is your thing.
 
 
 
 
This is the recipe which I used to make these cupcakes.
 
Ingredients
125g of margarine
125g of caster or granulated golden sugar
200g Self-raising flour
1 good teaspoon of vanilla extract
1/3 of a vanilla pod, de-seeded
3 free range or Organic eggs
4 tb spoons of dark chocolate chips (reserve the rest for decoration purposes!)
1 x jar of strawberry jam
1 x bag of desiccated coconut
orange smarties
 
Baking Kit
cupcake tray
cake cases
mixing bowl
wooden spoon
scales
 
1. Start off by mixing together the margarine and sugar.
 
2. add the three eggs one at a time, mixing in a little bit of flour as you go after each egg.
 
3. Add the remaining flour. Now add the vanilla extract and the middle of the vanilla bean pod.
 
4. Pour in the chocolate chips (reserving enough so that you can decorate the cupcakes too!)
 
5. Spoon the mixture into the cases but only half fill them as you're going to add a strawberry bit in the middle so they're like a doughnut!
 
6. Add the jammy bit into the centre of each cupcake and then fully cover with another spoonful of the cake mix.
 
7. Bake at 175 degrees centigrade until they are golden and well risen (in a pre-heated oven, this should be between 20-25 minutes).
 
8. Wait until cool then decorate! (icing sugar the cupcakes, sprinkle with desiccated coconut and then add the chocolate chips for the snowmen's eyes, smile and a orange smartie for the nose!)
 
9. And there you have it! A fun and festive bake which will definitely go down well with friends and family!
 
 
 
Don't you think that the round nose makes them look like the snowman from 'The Snowman'?! I do!
