Yesterday as a relaxing Sunday afternoon activity, and a well earned break from my University work, I officially flung myself into the spirit of Christmas by baking Christmas Pudding Cookies. As many of you will have already seen, I have been getting in the Autumn / Winter mood by baking Autumnal Spiced Toffee Apple Cake and yesterday was another opportunity for me to venture into baking wonderland again! You can pretty much make there fabulous cookies any flavour you like but opted for coconut and cranberry because it's Christmas!
To bake these yourself, you will need:
60g of butter / margarine
50g of oats
vanilla extract
80g of flour
80g of golden syrup
1 bar of good quality white chocolate
optional
2tb spoons of coconut
2tb spoons of dried cranberries
Start by combining the syrup, butter or margarine and extract together and then add all the dry ingredients and mix them together with a wooden spoon.
Then place about a table spoon of mixture on a lined baking tray and smooth it out so that the cookies are BIG! :D
Bake on 175c or about 20 minutes.
To decorate them you'll need to melt the white chocolate (I put mine in a ceramic bowl and pop it in the hot oven usually once the cookies have come out). I used writing icing to add the holly berries and leaves.
