Something Sweet | Coconut Ice Recipe

Hello you lovely lot! Today I want to share with you a mini weekend project idea that is guaranteed to sweeten up the end of your week! It's of course related to making / baking something and this time we're talking the sweetest of the sweet; Coconut Ice. If you have been swept away with the whole Coconut-Craze that's overtaken the blogger-sphere as of late, then this recipe's for you, as it's both yummy and nutritious, not to mention packed with (sugar) energy! Definitely a special treat that you can share with lots of friends and family!

 

 
Who doesn't love home made Bounty bars?


 
Recipe:
1 x tin of Carnation Condensed Milk
330g of coconut
450g of icing sugar
1 1/2 bars of Bournville chocolate
White chocolate stars
Desiccated coconut to sprinkle
 
Mix all of the ingredients together and make sure it's all nice and combined. The mixture tends to get much tougher to mix once everything's been put together so it's best to get it combined and then put evenly into a non-stick / lined baking tin quickly! No need to bake this, just leave until set and then cut into cubes / bars at whatever size you like. If you really want to go all out and get Bounty-licios, then you can fully coat them in dark Bournville chocolate, sprinkle with coconut and white chocolate stars for a super sweet decorative finish.
